Preparing pizza dough and pizza bases to freeze | Thermomix pizza dough

I often get asked at my Thermomix demonstrations about pizza dough and can you freeze it etc etc. I thought I would write this to show you what we do when we make pizza dough.

Firstly, make a batch of pizza dough using the EDC method. The only tweaks I make is that I warm the water first on 37C for 2 minutes with the oil and yeast in.

The batch in these photos has 2 large handfuls of baby spinach leaves in it, which I pre-milled on speed 8 for 10 seconds, then continued dough recipe. I just reduce the amount of liquid by 20-30g. I also used leftover whey from making ricotta (see the ricotta technique I use here) in place of water, as I had some on hand.

Let the dough rise in your Thermomat for 15-30 minutes. If I want to stretch my dough out to 3 bases I let it rise closer to 30 minutes.

Cut the dough into 3 equal sized balls.

Cut 3 squares of baking paper the same size as your container. I use a decor brand pastry keeper, I find it is the perfect size for pizza bases, fits my freezer well and I can fit 5 or more bases inside.

With the baking paper on top of your breadmat, roll or press out by hand into a square shape (or whatever fits your container) and put base into the container with the baking paper attached.

Continue with your other bases, layering them on top of each other with paper in between.

These freeze well for a month or so...personally I haven't kept them longer but I am sure you could freeze them longer.

If you prefer, you can par-bake your bases and freeze them par-baked. This is good if you want a quick meal later, just dress them and cook straight from the freezer. You will get a crispier base if you par-bake them before dressing them.

Afternoon 'pick-me-up' juice in the Thermomix

I was talking to someone at a demo recently about juicing with the Thermomix....something I didn't really do until about 6 months ago.

This is one of my FAVOURITE ones to make...for the colour and the health aspects. What juices do you like to make?

{ Afternoon pick me up }

1/2 beetroot
1 apple
1 orange
1 lemon
handful of raspberries
handful of ice
1 MC water

Blend on speed 9 for 1-2 minutes.

Home made pasta sauce

So today is one of those rainy-stay-in-your-pjs-till-lunchtime days, perfect for making pasta sauce!

I am no expert, and this is my own personal way of doing it...if you like it feel free to give it a go.

Easiest...pasta....sauce.....EVER!!

I basically used up most of the veggies in my crisper to make this.

4 stalks of celery
2 carrots
1 green capsicum
a few floret of cauliflower
1 onion
2 tins of chopped tomatoes (cheaper per kilo than fresh right now)
fresh basil, chives & parsley from the herb garden
2 TB vegetable stock paste from EDC
1/2 cup red wine

Chop veggies and fill bowl, speed 6 for 10-20 seconds until minced up. Then add 2 x tins tomato, veggie paste & a splash of red wine.
Cook 100c, speed 1 for 30 mins.
After cooking taste and season if it needs anything extra
Turn slowly to speed 6, then speed 9 for 30 seconds (do this slowly so it doesn't spit out the top and burn you)

And there you have it! I managed to make 2 litres of sauce with 6 veggies and red wine in 30 minutes while I got to sit down...all for around $2.80 which is less than 60c per jar. See how a Thermomix SAVES YOU MONEY??

We usually use this sauce to make pasta bake with some grated cheese and breadcrumbs finished off in the oven for a quick and tasty vegetarian meal the kids love. Try it!!

Hiding Veggies | Sausage Rolls

Its always a challenge getting the wee ones to eat veggies. Yet another reason I love my Thermomix. It is so easy to hide a multitude of vegetables in practically every dish you make.

Last night I made sausage rolls with 6 veggies in!!

  • carrot
  • onion
  • zucchini
  • pumpkin
  • mushroom
  • celery
I just roughly chop my veggies, throw them all in the bowl with 1 garlic clove and chop on speed 6 for 5-6 seconds or until they are visually the consistency you like.

Then add in your sausage meat (you can even mix it with half mince if you prefer that constistency), 1-2 eggs, breadcrumbs, seasoning and herbs and whiz it up again. EASY!!

Or...you can always go all out and make these and see if they can tell the difference!!
